This is a complete Veg Recipe, in fact it is Vegan. We will need very few and common ingredients, but the taste is really Authentic and Unique.

Ingredients
  • 250 g Brinjal or Eggplant
  • 1 Onion
  • 5-6 cloves of Garlic
  • 1 inch Ginger
  • 1 bowl Groundnut Crushed
  • 3 tablespoon red chili powder
  • 2 tablespoon Garam Masala
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Sugar
  • 1 Tablespoon lemon juice
  • Salt as per taste
  • 2 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 cup Coriander leaves
Instructions
  1. First and foremost wash the brinjal or eggplant with water.
  2. Then make 2 vertical cuts such that there are 4 pieces formed, but make sure “not to cut completely” we still need all four pieces connected to each other with stem.
  3. Now soak the Eggplant in salt water for 10 minutes. 

  4. As the Eggplant is soaked in salt water, meanwhile we will make the stuffing for the eggplant.

  5. For stuffing roughly chop onion, garlic and add to a blender. Also add peanuts, red chili powder, ginger, some coriander leaves and some Garam Masala with turmeric powder and some lemon juice to form a thick filling.

  6. Now remove the eggplants from water and stuff it with the filling.

  7. Now place a pot on fire and add some oil to it.

  8. Next add some mustard seeds and let them sputter. Now Fry the stuffed eggplant for few minutes till they are fried from all sides.

  9. Now add water to the pot enough to make sure that the eggplants are just about to be completely covered,

  10. Now place a lid on top of the pot and let it cook for 10 minutes.

  11. Once the eggplants are cooked, mix well and make sure that the curry is not to thin.

  12. Serve it in a bowl and garnish with freshly chopped coriander leaves.

  13. You can enjoy it with rice, Roti(Indian Flat bread), or even Bhakari.
