Shevayachi kheer is a dessert recipe prepared across India. Shevayachi kheer also known as seviyan kheer or vermicelli kheer is a traditional sweet prepared for many auspicious occasions and celebrations.

Ingredients
  • 2 bowl Vermicelli shevaya
  • 1 ½ bowl sugar
  • 2 tablespoon ghee clarified butter
  • 1 teaspoon cardamom powder vilaychi powder
  • 5 cashew nuts
  • 5 almonds
  • 10 raisins kismis
  • 2 ½ bowl milk
  • 5 strands of saffron
Instructions
  1. First take a pan and add 2 tablespoon of ghee (clarified butter) and melt it on a medium flame.
  2. Now add vermicelli to the ghee and fry till it becomes golden brown.
  3. Now add hot milk to the pan and stir well.
  4. Wait until it comes to a boil.
  5. Now add 1 and ½ bowl of sugar to the mixture.
  6. Stir and mix continuously on a low flame.
  7. Now add strands of saffron and all the dry fruits like cashew nuts, almonds, raisins and cardamom powder.
  8. Stir it and wait for it to boil.
  9. Once it’s boiled, you can either serve it hot as a drink, or enjoy it the way I like it.
  10. 10. First refrigerate it for 2 hours and enjoy it when it solidifies and becomes creamy and smooth.
Recipe Notes

If the vermicelli are thick, then add extra milk or if the vermicelli are thin add little less milk. This is my recipe of shevayachi kheer or vermicelli pudding. Hope you enjoy it. If you have any doubts or comments please feel free to ask them in the comments section below.
