Matki vada or sprouted moth bean fritters are crispy protein rich vegetarian, in fact vegan snacks. Matki vada is easy to prepare and requires not more than 15 minutes.

Ingredients
  • 1 bowl sprouted moth beans matki
  • 2 onion finely chopped
  • 4 tablespoon Chickpea flour Besan
  • 2 tablespoon rice flour
  • 2 green chili finely chopped
  • 2 tablespoon red chili powder
  • 1 teaspoon turmeric powder haldi
  • 1 teaspoon cumin powder
  • 1/2 bowl finely chopped coriander
  • 2 tablespoon lemon juice
  • pinch of asafoetida
  • salt as per taste
  • 1/2 inch finely chopped ginger
  • oil for deep frying
Instructions
  1. First grind sprouted moth beans, green chili and coriander and ginger into a coarse paste. DO NOT ADD WATER.

  2. Now add finely chopped onion, 4 tablespoon of besan or chickpea flour, 2 tablespoon of rice flour.

  3. Now lets add the spices. First add chili powder,turmeric powder,cumin seeds powder,salt to taste, pinch of asafoetida and make a soft dough out of it.

  4. DON'T ADD WATER TO THE MIXTURE. 

  5. Now make round shape fritters or vada, of medium thickness.

  6. Now heat the oil for deep frying the fritters.

  7. Once the oil is hot, make the flame medium and add the matki vada or moth bean fritters to the oil.

  8. Deep fry them for around 3-4 minutes till they are golden brown and crispy.

  9. Garnish it with coriander and enjoy it with coconut chutney or tomato ketchup.

Recipe Notes

Here are a couple of notes for making matki vada or moth bean fritters:

Don't add water to the dough.

Also make sure you eat them when they are hot as they don't remain crispy for long time.
