Matki usal is a healthy and tasty recipe made from sprouted moth beans. matki usal is tasty and protein rich at the same time.

Ingredients
  • 2 onion finely chopped
  • 2 red tomato finely chopped
  • 1/2 bowl coriander finely chopped
  • 2 tablespoon chili powder
  • 1/2 teaspoon turmeric powder
  • 250 gram sprouted moth beans
  • 1 tablespoon Garam Masala
  • 2 tablespoon tamarind juice extract
  • 5 gram jaggery
  • salt as per taste
  • 2 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
Instructions
  1. First Soak the moth beans in water and then drain the water and hang them in a plain cotton cloth overnight so that we get them sprouted.

  2. Now finely chop the onion and also the tomato. Also chop the coriander.

  3. Now add oil to a pan and heat it on a low flame.

  4. Once the oil is hot add cumin seeds and mustards seeds and wait till they pop.

  5. Now add chopped onion and sauté it for 2 min and add chopped tomato.

  6. Sauté for 2 minutes and add chili powder and turmeric powder. Then add garam masala. 

  7. Now add water and make a gravy.

  8. Now add jaggery and tamarind juice and let it boil for 3-4 minutes.

  9. Now add the sprouted moth beans to the gravy and mix well.

  10. Add salt to taste.

  11. Let it boil on low flame for 5 minutes.

  12. Now the matki usal or sprouted beans salad is ready.

  13. Remove it in a serving bowl and garnish it with chopped onion and coriander. Also place a dash of lime on the side.

  14. Enjoy it when it's hot.
