Malai Rabri recipe – how to make rabdi or rabri recipe | indian sweets recipes
Malai Rabri is an Indian Dessert dish made from, milk, sugar, some dry-fruits and cardamom powder.
This is how Malai rabri looks, once its prepared. It looks delicious, isn’t it?
Malai rabadi is a traditional Indian Sweet made from only 4 ingredients, namely milk, sugar, dry-fruits and cardamom powder. Though the requirements are very few, the taste is exotic and its undeniably creamy as it's name suggests, "Malai" which means "creamy".
- 2 litre milk high fat or full cream
- 2 bowl sugar
- 15 chopped almond
- 8 cashew nuts
- 5 pistachio
- 1 teaspoon cardamom powder
- 1 teaspoon Nutmeg powder
First step of making Malai Rabadi is to thicken the milk.
Take a thick bottom sauce pan, so that the heat is evenly distributed.
Add the 2 liters of full cream milk to the sauce pan and heat it on low flame.
Stir constantly and make sure that the milk doesn't burn nor stick to pan.
Heat the milk,till the volume of the milk is reduce to half, that is it should be really thick.
Now add the sugar and heat the milk for 5 minutes as the milk becomes thin after adding sugar as it melts.
Now add the powder of dry fruits, i.e almonds, cashew nuts and pistachio.
Now turn the flame off and add the cardamom and nutmeg powder and mix well.
Now to chill it keep it in the refrigerator for 2-3 hours.
Garnish it with dry-fruits and enjoy.
Our Malai rabadi is ready.
