Pithala vadi or Jhunka Vadi or Besan Vadi is an authentic Maharashtrian Recipe. It's beauty lies in it's simplicity. Simple yet healthy and tasty.

Ingredients
  • 2 cup Chickpea flour besan
  • 2 cup water
  • 2 tablespoon chili powder
  • 1 teaspoon turmeric powder
  • 2 tablespoon cooking oil
  • 2 tablespoon poppy seeds khas khas
  • 1/2 cup grated coconut
  • 1/2 cup coriander chopped
  • 1 teaspoon asafoetida
  • 1 teaspoon mustard seeds
  • salt
Instructions
  1. First mix the chickpea flour and water, chili powder and turmeric powder and salt in one bowl.

  2. Make sure there are no lumps formed.

  3. Now heat some oil in a pan and add the mustard seeds and let them splutter.

  4. Once the mustard seeds splutter add asafoetida add then the batter to the pan and stir well.

  5. Now cook well with a lid on, on a low flame.

  6. Now once the batter become thick add some more water and stir and cook again. 

  7. we don't the batter to remain uncooked.

  8. Now take a plain flat dish or tray and grease it with some oil, properly.

  9. Now add the cooked batter on the tray and spread in thin and evenly when its hot itself. Don't wait for it to cool down.

  10. Once it cool down then garnish it with chopped coriander, poppy seeds and dessicated coconut and then with the help of a knife cut the pieces of vadi in your favorite shape. I like it in diamond shape so i cut it diagonally.  

  11. Enjoy it with tea, or even with lunch.
